In this talk I will give a general view of the different observables that can be studied using low energy neutrinos. I will mainly focus in the case of coherent elastic neutrino-nucleus scattering (CEvNS), especially on the implications of the recent results from the COHERENT collaboration, that allows to get information on the weak mixing angle at low energies, the nuclear form factors of some nuclei, and on several new physics parameters that can be constrained. Some of these new physics parameters include non-standard interactions, neutrino magnetic moment, and light mediators, among others.
